Summer tomato soup:
  • 1 kg of tomatoes: fully ripe. They may even be a little soft.
  • 1 large potato
  • 1 large onion
  • Pepper and salt and maybe a stock cube for extra flavor Crème fraîche as needed
Quarter the tomatoes and place in a large saucepan.
Chop the onion and cut the potato into cubes.
Bring to a boil over medium heat and simmer for an hour at a boil. You will see that no water needs to be added: the tomatoes provide enough moisture for this soup. Stir occasionally and puree the soup with a hand blender or in a food processor.
