Pectin
Pure pectin E440 for making jellies and jams with min. 55 % sugar. 
Dosage : 10-60g/kg fruit.

​​​​​​NATUPEC: Pectin for the preparation of jam.
Dosage Natupec pectin depends on the fruit you use. The table below shows how much pectin is naturally present in the fruit you use, adjust your dosage of pectin accordingly. You use 10-60 grams per kg of fruit, for jelly and jam with at least 55% sugar. Do not forget to add an acid in the form of starter, lemon in pieces or lemon juice.
Bring the fruit with pectin and starter to the boil and cook for 2 minutes, add the sugar with continued stirring and then bring the mass to the boil for a moment. Do not let boiling for too long, then the pectin loses its binding properties.
