Beetroot sweet and sour






Red beet sweet and sour
  • 1 kg of red beet, water
  • 3 dl red wine vinegar or regular vinegar,
  • 3 dl water,
  • 180g sugar,
  • 1 tbsp honey,
  • 1 tsp cinnamon,
  • 10 peppercorns,
  • 6 cups of cloves,
  • 3 onions,
  • 2 sprigs of thyme,
  • 2 bay leaves,
  • 1 tsp salt

Preparation method
  • Bring water to the boil with a spoonful of salt and simmer the washed red beet in it for 20 minutes.
  • Drain the red beet and let it cool in cold water.
  • Peel the beets and cut into thin slices or wedges according to the thickness of the beets.
  • Put all the other ingredients in a saucepan, bring to the boil and simmer for 5 minutes.
  • Add the chopped red beet and cook for another 10 minutes.
  • Rinse the jars with boiling water and fill immediately to the brim with the red beet and liquid.
  • Turn the lids on and let the jars cool upside down.
  • Shelf life of up to 1 year.
