Liquid alpha-amylase
  • For mashed potatoes or ground grains - alpha-amylase is an enzyme that liquefies starch, which will be used to prepare purees from ground grains (eg rye, wheat, corn, rice) and potatoes.
  • High efficiency - a pack of 10 ml is sufficient for 50 kg of meal, at a dosage of 1 ml per 5 kg of raw material.
  • Easy to use - to water with a temperature of 85-95⁰C, add the selected raw material in the ratio: 1 kg of raw material to 3-4 L of water. Mix thoroughly and then add 1 ml of alpha-amylase for every 5 kg of grain or potatoes.
  • It works perfectly with TurboWhiskey or Turbo Potato yeast - thanks to the use of alpha-amylase with this distillery yeast, nutrient solution and glucoamylase, you get the guarantee of delicious and aromatic drinks!
  • Not for direct consumption - alpha-amylase is used to prepare the puree and is not suitable for direct consumption!

Alpha-amylase - starch liquefying enzyme, for pureed grains (eg rye, wheat, maize, rice) and potatoes. It works effectively at a temperature of 70-105°C and a pH of 4.5, -7.5. However, the best conditions for starch degradation are obtained at a temperature of 85-95°C and a pH of 5-5.5.

Instructions:
Heat the water in a vessel to 85-95⁰C, add the raw material in the ratio: 1 kg per 3-4 L of water. Mix thoroughly. Add alpha-amylase at the rate of 1 ml per 5 kg of raw material. Before adding, dissolve the measured amount of enzyme in a little water for better distribution in the puree. Keep the temperature of the mixture at about 95⁰C for 1 hour while stirring continuously. After this time, let the puree cool down to a temperature of 30⁰C. Add a sachet of distillery yeast, nutrient solution and glucoamylase (e.g. TurboWhiskey BROWIN 403160 or Turbo Potato 403400) and let ferment for about 3-7 days according to package instructions.
